Ingredients

  • 1 large egg (separated)
  • 2 teaspoons superfine sugar (divided)
  • 1 oz heavy cream
  • 1/2 teaspoon pure almond extract
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 oz aged rum
  • Garnish: grated nutmeg
  • Garnish: grated cinnamon

Instructions

  1. Separate the egg into two bowls.
  2. Beat the egg yolk until creamy using a hand mixer.
  3. In a separate bowl, beat the egg white with 1 teaspoon sugar until soft peaks form.
  4. Slowly fold the egg white and yolk together using a spoon.
  5. In another bowl, beat the cream with the vanilla and almond extracts and the remaining 1 teaspoon of sugar until stiff peaks form. Add the rum and stir gently.
  6. Slowly fold the cream into the egg mixture.
  7. Serve immediately over ice, if desired, in a punch or martini glass.
  8. Garnish with grated nutmeg and cinnamon.
