Ingredients

  • 1/4 cup diced pineapple
  • Zest and juice of 1/4 blood orange
  • Zest and juice of 1/4 lemon
  • 2 tablespoons granulated sugar
  • 1 cardamom pod
  • 1/4 cinnamon stick
  • 1/4 star anise
  • 1 whole clove
  • 3 coriander seeds
  • 1 tablespoon brewed hibiscus tea
  • 1/4 cup boiling water
  • 1 tablespoon St-Rémy Signature
  • 2 tablespoons Mount Gay Black Barrel Double Cask Blend
  • 1 tablespoon white rum
  • 1 tablespoon Pernod
  • 1/4 cup whole milk
  • Garnish: hibiscus flower in syrup

Instructions

  1. In a mixing bowl, muddle together the diced pineapple, lemon zest, lemon juice, blood orange zest, blood orange juice, sugar, and spices.
  2. Add the hibiscus tea and boiling water, and stir until the sugar is dissolved. Mix in the spirits.
  3. In a separate bowl, pour the whole milk, then add the punch mixture and stir. Let it sit for about 30 minutes to curdle.
  4. Strain the mixture through a fine mesh sieve.
  5. Clean the sieve, line it with a coffee filter or cheesecloth, and strain the mixture again. Repeat if any cloudy bits remain.
  6. Transfer the clarified milk punch to bottles or jars and store in the refrigerator.
  7. Pour into a rocks glass over a large ice cube and garnish with a hibiscus flower in syrup.
