Ingredients

  • 2 ounces blended scotch
  • 3/4 ounce freshly squeezed lemon juice
  • 3/4 ounce honey-ginger syrup*
  • 1/4 ounce Islay single malt scotch
  • Garnish: candied ginger

Instructions

  1. In a shaker with ice, combine the blended scotch, freshly squeezed lemon juice, and honey-ginger syrup. Shake well until chilled.
  2. Strain the mixture into a rocks glass over fresh ice.
  3. Top the drink with Islay single malt scotch.
  4. Garnish with a piece of candied ginger.
  5. *Honey-ginger syrup: Combine 1 cup honey, 1 6-inch piece of peeled and thinly sliced ginger, and 1 cup water in a saucepan over high heat. Bring to a boil, then reduce heat to medium and simmer for 5 minutes. Refrigerate the mixture overnight to steep, then strain with a cheesecloth.
