Ingredients

  • 3 tbsp coarse pink salt
  • 2 oz Mezcal
  • 1.50 oz pink grapefruit juice (freshly-squeezed)
  • 1 oz lime juice (freshly-squeezed)
  • 1 oz simple syrup
  • 1 tbsp Aperol
  • 1 sprig fresh rosemary

Instructions

  1. Rub the rim of the glass with grapefruit juice and dip it into the salt, pressing gently to coat the rim.
  2. In a cocktail shaker, combine mezcal, grapefruit juice, lime juice, sugar syrup, and Aperol.
  3. Fill the shaker with ice, seal, and shake vigorously for about 20 seconds.
  4. Strain the cocktail into a chilled glass.
  5. Light the sprig of rosemary and then immediately extinguish. Place it in the glass while still smoking.
