Ingredients
- 6 eggs, at room temperature
- 1/2 teaspoon cream of tartar
- 1 cup superfine sugar
- 1/4 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1 1/4 cup powdered sugar
- 1/2 cup heavy whipping cream
- Hot water
- Rum
- Nutmeg for garnish
Instructions
- Separate the eggs.
- Beat the egg whites and cream of tartar until a soft meringue forms.
- Gradually add the superfine sugar and continue beating until stiff peaks form.
- Place the meringue in a large mixing bowl.
- In the same bowl, beat the egg yolks and 1 cup of powdered sugar until light yellow and frosting-like in consistency.
- Add the spices and mix for about 1 minute.
- Fold the yolk mixture into the egg white mixture.
- In a clean mixing bowl, whip the heavy cream with the remaining 1/4 cup powdered sugar until stiff peaks form.
- Gently fold the whipped cream into the egg mixture.
- Fill a mug with hot water and add 1 ounce of rum.
- Top with a scoop of the eggnog mixture.
