Ingredients

  • 2 oz Persian cucumbers, roughly chopped
  • 1 tbsp cilantro leaves and tender stems, roughly chopped
  • 1 tbsp granulated sugar
  • 1/4 tsp finely grated fresh lime zest
  • 2 tbsp fresh lime juice (from about 1/2 lime)
  • 1/4 tsp minced jalapeño
  • Pinch of sea salt
  • 1 1/2 oz white tequila
  • Ice

Instructions

  1. In a blender, blend the cucumbers, cilantro, sugar, lime zest, lime juice, and minced jalapeño until smooth.
  2. Strain the liquid from the solids using a fine-mesh sieve into a measuring cup, discarding the solids.
  3. Stir in a pinch of salt and mix the strained cucumber liquid with tequila.
  4. To serve, rim the glass with salt (optional). Dip the moistened rim of the glass in sea salt and fill the glass with ice.
  5. Shake the margarita in a cocktail shaker with ice and pour into the prepared glass. Add a slice of jalapeño on top of the ice for an extra kick.
