Ingredients

  • 1 oz fresh ginger - peeled and finely chopped
  • 2 oz water
  • 1/4 cup raw or white sugar
  • 1/2 tbsp dark brown palm sugar (for a richer color and flavor)
  • Lime wedge
  • Soda water
  • Ice

Instructions

  1. In a small pot, combine water and chopped ginger, then cover and bring to a boil.
  2. Turn off the heat and let the mixture steep for 30-60 minutes to extract the ginger's flavor.
  3. Strain out the chopped ginger and return the ginger-infused water to the pot.
  4. Stir in the sugars, bring the mixture to a boil, and then turn off the heat.
  5. Allow the ginger syrup to cool.
  6. In a glass, add syrup according to your taste, along with ice, freshly squeezed lime juice, and soda water.
