Ingredients

  • 5 oz Strong coffee (freshly brewed using 0.5 oz ground coffee and 2.5 oz water)
  • 10 oz Milk (full fat)
  • 1 oz Dark chocolate (with 70% cocoa solids)
  • 1 tablespoon Honey
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg
  • 1/4 teaspoon Ground allspice
  • 3/4 teaspoon Ancho chili powder (or other chili powder of your choice)
  • Pinch of salt
  • Whipped cream
  • Grated chocolate
  • Ancho chili powder
  • Ground cinnamon or a cinnamon stick

Instructions

  1. Heat the milk, then stir in the honey, cinnamon, nutmeg, allspice, and chili powder. Let it infuse for 15 minutes.
  2. Strain the infused milk and return it to a clean pan.
  3. Add chopped chocolate and a pinch of salt to the pan. Heat and stir until the chocolate melts, then remove from heat at 158F.
  4. Brew coffee and pour it into the pan. Stir.
  5. Optionally froth the drink, then pour it into warmed mugs or coffee glasses.
  6. Top with cream and garnishes, then serve immediately.
