Ingredients

  • 1 very ripe pear
  • 1.50 oz bourbon
  • 0.50 oz maple syrup
  • 0.25 oz lemon juice
  • 1 tsp vanilla extract (or the seeds scraped from 1/3 of a vanilla bean)
  • 1/4 tsp allspice
  • Ice

Instructions

  1. Begin by slicing the pear in half and removing any overly squishy pulp, seeds, and stem.
  2. Roughly dice the pear and place it in a medium bowl, then mash it with a fork or potato masher.
  3. Transfer the mashed pear to a fine mesh strainer set over a wide-mouthed measuring cup or another bowl.
  4. Press the pear pulp against the strainer to extract as much juice and some pulp as possible.
  5. Once the pear juice is obtained, add the bourbon, maple syrup, lemon juice, vanilla extract, and allspice to the juice, then add ice and stir vigorously to mix.
  6. Fill a glass with ice and strain the drink into the glass.
