Ingredients

  • 1 Apricot (fresh or frozen)
  • 2 oz Bourbon
  • 1 oz Aperol Orange Liqueur
  • 1/2 - 1 oz Simple Syrup (depending on the sweetness of the fruit)
  • Juice of 1/2 Lemon
  • 1 Mint Sprig
  • 1 Lemon Slice
  • 2 Slices Fresh Apricot
  • Ice

Instructions

  1. Slice the apricot in half and remove the stone, then slice each half into 6-8 slices.
  2. Taste a slice of the apricot to determine the amount of simple syrup needed.
  3. Reserve 2 slices for garnish.
  4. Place the remaining apricot slices into a tall glass and add the bourbon, Aperol, and simple syrup, then muddle the mixture well.
  5. Add ice to a cocktail shaker, then strain the muddled liquor into it, cover, and shake well.
  6. Strain the mixture into a tumbler over ice.
  7. Garnish with apricot slices, a lemon slice, and a mint sprig.
