Ingredients

  • 1.50 oz Malibu Coconut Rum
  • 2 oz frozen strawberries (semi thawed)
  • 1 tbsp 7UP
  • 2 oz pineapple juice
  • 1 oz cream of coconut
  • 1/2 banana
  • 1 cup crushed ice
  • fresh pineapple wedges (garnish)

Instructions

  1. In a blender, blend the semi-thawed strawberries, Malibu Coconut Rum, and 7UP until smooth.
  2. Strain the mixture through a fine mesh strainer and set it aside. Clean the blender.
  3. Blend the cream of coconut and pineapple juice until well mixed, then set it aside.
  4. In the clean blender, blend the crushed ice and banana until smooth.
  5. Add the pineapple and coconut mixture to the banana and ice mixture, and blend until frothy and smooth. Set it aside.
  6. Fill a glass halfway with the strawberry daiquiri mixture.
  7. Slowly pour the pina colada mixture into the glass, allowing it to drip down the side and settle at the bottom, while the strawberry rum rises to the top.
  8. Serve immediately, garnished with fresh pineapple wedges.
