Ingredients

  • 2 oz heavy whipping cream
  • 1 tablespoon confectioners' sugar
  • STRAWBERRY SODA:
  • 3/4 cup frozen unsweetened sliced strawberries, thawed
  • 2 tablespoons sugar
  • 1 tablespoon lime juice
  • 1/2 cup chilled carbonated water
  • ASSEMBLY:
  • 1/2 cup vanilla ice cream
  • Sliced fresh strawberries, optional

Instructions

  1. In a small bowl, whip the heavy cream until it thickens, then add the confectioners' sugar and continue beating until soft peaks form. Refrigerate until serving.
  2. In a blender, combine the thawed strawberries, sugar, and lime juice. Blend until pureed, then strain the mixture through a fine-mesh strainer into a pitcher, discarding the seeds. Stir in the carbonated water.
  3. Scoop the vanilla ice cream into a glass. Pour the strawberry soda over the ice cream.
  4. Top with the whipped cream and fresh strawberries if desired. Serve immediately.
