Ingredients
- 2 oz heavy whipping cream
- 1 tablespoon confectioners' sugar
- STRAWBERRY SODA:
- 3/4 cup frozen unsweetened sliced strawberries, thawed
- 2 tablespoons sugar
- 1 tablespoon lime juice
- 1/2 cup chilled carbonated water
- ASSEMBLY:
- 1/2 cup vanilla ice cream
- Sliced fresh strawberries, optional
Instructions
- In a small bowl, whip the heavy cream until it thickens, then add the confectioners' sugar and continue beating until soft peaks form. Refrigerate until serving.
- In a blender, combine the thawed strawberries, sugar, and lime juice. Blend until pureed, then strain the mixture through a fine-mesh strainer into a pitcher, discarding the seeds. Stir in the carbonated water.
- Scoop the vanilla ice cream into a glass. Pour the strawberry soda over the ice cream.
- Top with the whipped cream and fresh strawberries if desired. Serve immediately.
