Ingredients
- 4-5 fresh strawberries, sliced
- 2 tablespoons sugar
- 2 tablespoons water
- 1 tarragon sprig
- 2 teaspoons lime juice
- 1/4 teaspoon whole peppercorns
- 1/2 cup sweet white wine, such as riesling, chilled
- 1/2 cup club soda, chilled

Instructions
- In a small saucepan, combine sliced strawberries, sugar, water, tarragon sprig, lime juice, and whole peppercorns.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
- Remove the mixture from heat and allow it to cool completely.
- Strain the syrup through a fine-mesh strainer into a small bowl without pressing the berries.
- Refrigerate the syrup until chilled.
- To serve, fill a tall glass with ice.
- Add 1/2 cup sweet white wine and 1/2 cup club soda to the glass.
- Pour in 1/4 cup of the chilled strawberry syrup.
- Optionally, garnish with a tarragon sprig.
