Ingredients
- 1/4 cup sliced fresh strawberries
- 2 tablespoons sugar
- 2 tablespoons water
- 1 tarragon sprig
- 1/2 tablespoon lime juice
- 1/8 teaspoon whole peppercorns
- 1/2 cup sweet white wine, such as riesling, chilled
- 1/2 cup club soda, chilled

Instructions
- In a small saucepan, bring strawberries, sugar, water, tarragon sprig, lime juice, and peppercorns to a boil.
- Reduce heat and simmer for 20 minutes.
- Remove from heat and allow the syrup to cool completely.
- Strain the syrup through a fine-mesh strainer into a small bowl without pressing the berries.
- Refrigerate the syrup until chilled.
- To serve, fill a tall glass with ice and add wine, club soda, and strawberry syrup.
- Garnish with additional tarragon if desired.
