Ingredients
- 10.50 oz Ripe Apricots, roughly chopped
- 3.50 inches Ginger root, cut into 2 x 4-inch lengths and peeled
- 1/2 cup Caster Sugar
- 3.50 oz Water
- 2 oz Gold Rum
- 1 tbsp Ginger Juice
- 1 tbsp Ginger Syrup
- 2 tsp Lime Juice
- 2 oz Frozen Apricots
Instructions
- Lay the chopped apricot pieces on a tray and freeze until solid.
- Grate one piece of ginger and place the pieces into a muslin cloth, then squeeze over a jug to extract the juice. Chill the juice in the fridge.
- In a small pan, combine the remaining ginger, sugar, and water. Dissolve the sugar over low heat, then boil for 3-5 minutes until syrupy. Allow the ginger syrup to cool to room temperature, then strain out the ginger. Chill the syrup in the fridge.
- Once ready to prepare the cocktail, add all the ingredients to a high-speed blender and blend until smooth.
- Pour the blended mixture into a glass and serve immediately.
