Ingredients

  • 10.50 oz Ripe Apricots, roughly chopped
  • 3.50 inches Ginger root, cut into 2 x 4-inch lengths and peeled
  • 1/2 cup Caster Sugar
  • 3.50 oz Water
  • 2 oz Gold Rum
  • 1 tbsp Ginger Juice
  • 1 tbsp Ginger Syrup
  • 2 tsp Lime Juice
  • 2 oz Frozen Apricots

Instructions

  1. Lay the chopped apricot pieces on a tray and freeze until solid.
  2. Grate one piece of ginger and place the pieces into a muslin cloth, then squeeze over a jug to extract the juice. Chill the juice in the fridge.
  3. In a small pan, combine the remaining ginger, sugar, and water. Dissolve the sugar over low heat, then boil for 3-5 minutes until syrupy. Allow the ginger syrup to cool to room temperature, then strain out the ginger. Chill the syrup in the fridge.
  4. Once ready to prepare the cocktail, add all the ingredients to a high-speed blender and blend until smooth.
  5. Pour the blended mixture into a glass and serve immediately.
