Ingredients

  • 2 cardamom pods
  • 1 star anise
  • 2 teaspoons lime juice
  • 1 teaspoon caster sugar
  • 2 tablespoons dark rum
  • 2 teaspoons Grand Marnier
  • 2 tablespoons passionfruit juice
  • 1/2 egg white
  • Pulp from 1 passionfruit
  • Saffron threads (optional), to serve

Instructions

  1. Lightly crush the cardamom pods and star anise in a mortar and pestle.
  2. In a cocktail shaker, combine the crushed spices, lime juice, sugar, rum, Grand Marnier, passionfruit juice, egg white, and 1 teaspoon of cold water.
  3. Add ice to the shaker and shake until well combined.
  4. Place the passionfruit pulp in a martini glass, then strain the cocktail over the pulp.
  5. Optionally, top with saffron and serve.
