Ingredients

  • 1 3/4 oz Aperol
  • 3/4 oz red vermouth
  • 3/4 oz verjus
  • 1 1/2 oz fresh grapefruit juice
  • 3 dashes grapefruit bitters
  • Champagne or other sparkling wine, to top
  • Long grapefruit twist, for garnish

Instructions

  1. Fill a cocktail shaker halfway with ice.
  2. Add Aperol, red vermouth, verjus, fresh grapefruit juice, and grapefruit bitters to the shaker.
  3. Shake the ingredients well and strain the mixture into a coupe glass.
  4. Top the cocktail with Champagne.
  5. Garnish with a long grapefruit twist and serve.
