Ingredients

  • 1 1/2 oz Aperol
  • 3/4 oz gin
  • 1/2 oz lemon juice
  • 3/4 oz simple syrup
  • A few dashes of orange bitters
  • 1 egg white
  • Ice

Instructions

  1. Combine Aperol, gin, lemon juice, simple syrup, bitters, and egg white in a cocktail shaker without ice.
  2. Shake vigorously for 30 seconds (dry shake).
  3. Add a handful of ice to the shaker and shake for an additional 30 seconds.
  4. Strain the cocktail into a chilled coupe glass.
  5. Garnish with dehydrated lemon or orange wheels, or a fresh lemon twist.
