Ingredients

  • 1 cup raspberries
  • 1.50 tablespoons sugar
  • 8 sprigs fresh tarragon
  • 1.50 tablespoons red-wine vinegar
  • Ice
  • 0.50 cup chilled sparkling water

Instructions

  1. In a large nonreactive pot, combine raspberries, sugar, and tarragon. Let it stand at room temperature for 1 hour, stirring occasionally.
  2. Cook the raspberry mixture over medium heat until it starts to simmer for about 5 minutes, then add the vinegar and continue cooking for another 3 to 5 minutes without letting it boil.
  3. Remove from heat, cover it with cheesecloth or a clean kitchen towel, and let it stand at room temperature for 24 hours.
  4. Remove and discard the tarragon, then strain the mixture into an airtight container. Refrigerate the shrub until cold, at least 1 hour and up to 1 month.
  5. To make each drink, fill a glass with ice, add 1 1/2 tablespoons shrub, and top with sparkling water. Stir once and garnish with fresh raspberries and tarragon, if desired.
