Ingredients

  • 1 large, juicy lemon
  • 1 sprig fresh thyme
  • 1 tablespoon mild honey
  • 2 ounces good gin
  • 1 ounce dry vermouth

Instructions

  1. Heat a cast iron skillet over medium-high heat until very hot.
  2. Cut the lemon in half and then cut a 1/4-inch-thick round slice from one half.
  3. Place the lemon halves and the slice into the pan, cut sides down, and cook for about three to four minutes until nicely charred.
  4. Remove the lemon from the pan and add the thyme sprig. Cook for about a minute until fragrant, then set aside to cool.
  5. Squeeze the juice from the lemon halves through a fine-mesh sieve into a small bowl.
  6. Measure out 1 1/2 ounces of juice, reserving any extra for another use.
  7. Stir the honey into the lemon juice until dissolved.
  8. Fill a cocktail shaker with ice and pour in the lemon juice mixture, gin, and vermouth. Shake well.
  9. Place a few ice cubes into a single old fashioned glass and strain the drink into the glass.
  10. Garnish with the charred lemon slice and thyme sprig, bruising the thyme with your fingers to infuse its flavors into the drink.
