Ingredients

  • 3 1/2 tablespoons espresso coffee (or strong instant coffee)
  • 1/2 tablespoon coffee liqueur
  • 1 Savoiardi biscuit (fine sponge finger)
  • 1 large egg white
  • 1/2 cup mascarpone cheese
  • 1/2 tablespoon honey
  • 1/2 tablespoon Marsala
  • Approx. 1/4 teaspoon good-quality cocoa powder

Instructions

  1. Prepare the espresso and pour it into a heatproof jug, then add the coffee liqueur. Let it cool for about 10 minutes.
  2. Break the Savoiardi sponge finger into small pieces and place them into a small martini glass.
  3. Pour the cooled espresso mixture over the sponge finger pieces, ensuring they are soaked thoroughly.
  4. Using an electric hand-held whisk, beat the egg white until soft peaks form, then set aside.
  5. In another bowl, combine the mascarpone and honey, and beat until smooth. Slowly beat in the Marsala.
  6. Fold the egg white into the mascarpone mixture, then spoon this mixture over the soaked Savoiardi in each glass, creating a swirly peak at the top.
  7. Let the glasses sit in the fridge for at least 20 minutes and up to 24 hours, then dust with cocoa powder just before serving.
