A delightful twist on the classic Italian dessert tiramisu, this cocktail features layers of coffee-soaked Savoiardi sponge fingers topped with a luscious, whipped mascarpone mixture spiked with Marsala, served in small martini glasses.
Ingredients
- 3 1/2 tablespoons espresso coffee (or strong instant coffee)
- 1/2 tablespoon coffee liqueur
- 1 Savoiardi biscuit (fine sponge finger)
- 1 large egg white
- 1/2 cup mascarpone cheese
- 1/2 tablespoon honey
- 1/2 tablespoon Marsala
- Approx. 1/4 teaspoon good-quality cocoa powder
Instructions
- Prepare the espresso and pour it into a heatproof jug, then add the coffee liqueur. Let it cool for about 10 minutes.
- Break the Savoiardi sponge finger into small pieces and place them into a small martini glass.
- Pour the cooled espresso mixture over the sponge finger pieces, ensuring they are soaked thoroughly.
- Using an electric hand-held whisk, beat the egg white until soft peaks form, then set aside.
- In another bowl, combine the mascarpone and honey, and beat until smooth. Slowly beat in the Marsala.
- Fold the egg white into the mascarpone mixture, then spoon this mixture over the soaked Savoiardi in each glass, creating a swirly peak at the top.
- Let the glasses sit in the fridge for at least 20 minutes and up to 24 hours, then dust with cocoa powder just before serving.
