Ingredients

  • 1/2 tablespoon sugar, for rimming champagne flute
  • Pineapple wedge
  • 1/4 cup pineapple juice
  • 1 tablespoon coconut milk (not canned)
  • 2 oz champagne, cava, or prosecco
  • Whipped topping, for serving

Instructions

  1. Sprinkle sugar onto a plate. Rim the champagne flute with the pineapple wedge and dip it in the sugar. Set aside.
  2. In a tall glass, stir together pineapple juice and coconut milk until well blended.
