A refreshing and easy-to-make frozen dessert featuring fresh pineapple, coconut water, rum, and a hint of lemon juice.
Ingredients
- 1 1/2 cups Fresh Pineapple Chunks
- 1 tbsp White Sugar
- 1 tbsp Havana Club 3 yr old Rum
- 1/4 cup Coconut Water
- 1/4 tsp Lemon Juice
- A tiny pinch of Salt
Instructions
- In a blender, combine the fresh pineapple chunks, white sugar, rum, coconut water, lemon juice, and a pinch of salt. Blend until the mixture is pureed and smooth.
- Pour the blended mixture into a wide dish, spreading it out to facilitate quicker freezing. Do not cover the dish.
- Place the dish in the freezer and let it freeze overnight.
- Using a fork, gently break apart the frozen granita until it reaches the desired texture and size.
- Return the dish to the freezer, leaving it uncovered until ready to serve. Allow it to refreeze for at least another 30 minutes before serving.
