Ingredients

  • 1 1/2 cups Fresh Pineapple Chunks
  • 1 tbsp White Sugar
  • 1 tbsp Havana Club 3 yr old Rum
  • 1/4 cup Coconut Water
  • 1/4 tsp Lemon Juice
  • A tiny pinch of Salt

Instructions

  1. In a blender, combine the fresh pineapple chunks, white sugar, rum, coconut water, lemon juice, and a pinch of salt. Blend until the mixture is pureed and smooth.
  2. Pour the blended mixture into a wide dish, spreading it out to facilitate quicker freezing. Do not cover the dish.
  3. Place the dish in the freezer and let it freeze overnight.
  4. Using a fork, gently break apart the frozen granita until it reaches the desired texture and size.
  5. Return the dish to the freezer, leaving it uncovered until ready to serve. Allow it to refreeze for at least another 30 minutes before serving.
