Ingredients

  • 10 to 12 coffee beans
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 vanilla bean, split and seeds scraped
  • 2 ounces Pyrat Rum XO Reserve (or you may use bourbon)
  • 3 tablespoons half and half

Instructions

  1. Roughly crush the coffee beans in a mortar and pestle or with a heavy skillet on a cutting board.
  2. In a small saucepan, combine the sugar and water and simmer over medium-high heat, stirring until the sugar dissolves.
  3. Add the seeds from the split vanilla bean and whisk to break them up, then remove from the heat and let the vanilla simple syrup cool.
  4. Fill a cocktail shaker with ice and add the crushed coffee beans, 1 tablespoon of the vanilla simple syrup, the rum, and half-and-half.
  5. Cover and shake until well-chilled, at least 30 seconds.
  6. Set a fine mesh strainer over a chilled martini glass, pour the drink through the strainer, and discard the coffee beans. Serve chilled.
