Ingredients

  • 1/5 cup Whole Milk
  • 1/10 cup Heavy Whipping Cream
  • 1/4 teaspoon Ground Nutmeg
  • a pinch of Salt
  • 2 tablespoons Sugar
  • 2 large Egg Yolks
  • 1/2 teaspoon Vanilla Extract

Instructions

  1. Heat the whole milk, heavy cream, nutmeg, and salt in a large saucepan over medium heat until just warmed, stirring frequently.
  2. In a small mixing bowl, whisk together the sugar and egg yolks until fully combined.
  3. Take 2-3 scoops of the warmed milk mixture and slowly pour it into the egg yolk mixture, stirring constantly to temper the eggs.
  4. Pour the egg yolk mixture back into the saucepan with the remaining milk and cream mixture, and bring it to a slow boil, whisking continuously until the mixture reaches 160°F.
  5. Remove from heat and stir in the vanilla extract.
  6. Strain the mixture through a fine mesh sieve into a pitcher, cover with plastic wrap, and chill in the refrigerator for about 2 hours to thicken.
