Ingredients
- 1/5 cup Whole Milk
- 1/10 cup Heavy Whipping Cream
- 1/4 teaspoon Ground Nutmeg
- a pinch of Salt
- 2 tablespoons Sugar
- 2 large Egg Yolks
- 1/2 teaspoon Vanilla Extract
Instructions
- Heat the whole milk, heavy cream, nutmeg, and salt in a large saucepan over medium heat until just warmed, stirring frequently.
- In a small mixing bowl, whisk together the sugar and egg yolks until fully combined.
- Take 2-3 scoops of the warmed milk mixture and slowly pour it into the egg yolk mixture, stirring constantly to temper the eggs.
- Pour the egg yolk mixture back into the saucepan with the remaining milk and cream mixture, and bring it to a slow boil, whisking continuously until the mixture reaches 160°F.
- Remove from heat and stir in the vanilla extract.
- Strain the mixture through a fine mesh sieve into a pitcher, cover with plastic wrap, and chill in the refrigerator for about 2 hours to thicken.
