  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 3 tablespoons dried lavender flowers
  • 1/2 oz lavender simple syrup
  • 1 1/2 oz Absolut Elyx
  • 1 oz coconut water
  • 1/2 egg white
  • 1/2 oz lemon juice


  1. In a small saucepan over medium heat, combine sugar, water, and dried lavender flowers.
  2. Allow the mixture to come to a boil, then reduce the heat to low and simmer for 10 minutes.
  3. Remove from heat and let it cool slightly before draining through a sieve to remove the lavender buds.
  4. Fill a cocktail shaker with ice and add the lavender simple syrup, Absolut Elyx, coconut water, egg white, and lemon juice.
  5. Shake vigorously until frothy.
  6. Strain and pour the mixture into a coupe glass.
  7. Garnish with edible flowers or a sprinkle of dried lavender.
