Ingredients

  • 3 oz Rosè wine or Sauvignon Blanc (Use good quality)
  • 1-2 cups Seedless watermelon, frozen
  • 1 tbsp Honey
  • 1/4 cup Water
  • 1 tbsp Lime juice (freshly squeezed)
  • Fresh mint leaves for garnish

Instructions

  1. Pour wine into ice cube trays and freeze until solid, 8 hours or overnight.
  2. Slice watermelon into cubes and freeze until solid on a lined baking sheet, or overnight.
  3. For the cilantro mint simple syrup, combine water and honey in a pan, add cilantro and mint leaves, and bring to a boil.
  4. Simmer on low heat for 15 minutes, then remove from heat and let it cool. Chill the syrup in the fridge for 15 minutes before adding it to the blender.
  5. Place wine ice cubes, frozen watermelon, chilled simple syrup, and lime juice in a blender; blend until combined and smooth.
  6. Pour into a cocktail glass and garnish with fresh mint leaves.
