Ingredients
- 3 oz Rosè wine or Sauvignon Blanc (Use good quality)
- 1-2 cups Seedless watermelon, frozen
- 1 tbsp Honey
- 1/4 cup Water
- 1 tbsp Lime juice (freshly squeezed)
- Fresh mint leaves for garnish
Instructions
- Pour wine into ice cube trays and freeze until solid, 8 hours or overnight.
- Slice watermelon into cubes and freeze until solid on a lined baking sheet, or overnight.
- For the cilantro mint simple syrup, combine water and honey in a pan, add cilantro and mint leaves, and bring to a boil.
- Simmer on low heat for 15 minutes, then remove from heat and let it cool. Chill the syrup in the fridge for 15 minutes before adding it to the blender.
- Place wine ice cubes, frozen watermelon, chilled simple syrup, and lime juice in a blender; blend until combined and smooth.
- Pour into a cocktail glass and garnish with fresh mint leaves.
