Watermelon Fennel Fizz
This refreshing cocktail, made from freshly pureed red watermelon and zesty ginger beer, is a delightful and nutrient-dense drink that can be enjoyed throughout the day. Watermelon Fennel Fizz
A refreshing and hydrating cocktail made with freshly pureed watermelon, zesty ginger beer, and fennel frond-infused ice cubes.
Ingredients
- 2 tablespoons fresh fennel fronds (optional)
- Filtered water
- 1 1/2 cups (1-inch) cubed red watermelon
- 1/2 cup ginger beer
Instructions
- Divide the fennel fronds, if using, between an ice cube tray. Fill with filtered water and freeze until solid, 4 to 8 hours.
- Place the watermelon in a blender and blend until smooth. Scrape the sides of the blender using a rubber spatula and blend again.
- Place a fine metal sieve over a large bowl and strain the pureed watermelon through the sieve. (This should yield 1 to 1 1/2 cups of juice). Store in the refrigerator until ready to serve.
- To serve, fill a highball glass or a rocks glass with the fennel frond-infused ice cubes. Stir the watermelon juice and add to the glass. Top off with ginger beer.
