Watermelon Frost Mintade

Ingredients

  • 8 oz frozen watermelon chunks
  • Juice of 1 1/4 lemons
  • 1 1/2 sprigs fresh mint
  • 6 oz ice cold water
  • 1 tbsp sugar (or to taste)

Instructions

  1. Line a sheet pan with parchment paper or wax paper and set aside.
  2. Remove rind from watermelon and discard. Cut watermelon fruit into one or two-inch chunks and place onto prepared sheet pan in a single layer, leaving space between each piece of fruit.
  3. Transfer sheet pan to the freezer and allow watermelon to freeze for at least 30 minutes.
  4. Juice the lemons and remove mint leaves from the stems.
  5. Add frozen watermelon chunks, lemon juice, fresh mint leaves, ice cold water, and sugar to the blender.
  6. Pulse until ingredients are uniform and smooth, creating a thick, frosty, slushy mixture.
  7. Divide frozen watermelon mint lemonade into a highball glass and serve immediately with a straw and a sprig of fresh mint.
