Ingredients
- 5 oz Rosè wine or Sauvignon Blanc (good quality)
- 1/3 - 1/2 lb Seedless watermelon
- Small handful of Cilantro
- Small handful of Mint
- 1 tbsp Honey
- 2 tbsp Water
- 2 tbsp Lime juice (freshly squeezed)
- Fresh mint leaves for garnish
Instructions
- Pour the wine into ice cube trays and freeze until solid, around 8 hours or overnight.
- Cut the watermelon into cubes and place them on a lined baking sheet. Freeze until solid, also for around 8 hours or overnight.
- In a pan, combine water and honey, then add cilantro and mint leaves. Bring to a boil, then simmer on low heat for fifteen minutes. Remove from heat and let the simple syrup cool. Chill in the fridge for 15 minutes before using.
- In a blender, combine the wine ice cubes, frozen watermelon, chilled simple syrup, and lime juice. Blend until smooth and well-combined.
- Pour the mixture into cocktail glasses and garnish with fresh mint leaves.
