Ingredients
- 3 tablespoons lemon juice (freshly squeezed is preferred)
- 3 tablespoons granulated sugar
- 3 to 4 tablespoons full fat coconut milk, chilled in the fridge for at least 2 hours or overnight
- 1 cup ice cubes
- Optional: fresh lemon wedge or slices for garnish
Instructions
- In a small saucepan, combine the lemon juice and sugar, and heat over medium-high heat for about 2 minutes, stirring constantly until the sugar dissolves to create a lemon simple syrup.
- In a high-speed blender, add the lemon simple syrup, the thick and fatty part of the chilled coconut milk, and ice. Blend on high until the mixture is whipped and frothy.
- Add additional ice cubes if a thicker consistency is desired.
- Optionally garnish with a fresh lemon wedge or slices, and serve immediately.
