Ingredients

  • 2 tbsp boba tea tapioca pearls
  • 1 tbsp sugar
  • 5 fresh mint leaves
  • 1 oz Green Chartreuse
  • 1 oz gin
  • 1 oz fresh lime juice
  • 1 oz simple syrup
  • 0.25 oz Aperol (or Campari)

Instructions

  1. Prepare the boba tapioca balls by boiling 6 cups of water, adding sugar and tapioca balls, and cooking until they float to the surface and reach desired softness.
  2. Drain and rinse the tapioca balls with cold water.
  3. Muddle 5 mint leaves in a cocktail shaker, then add Chartreuse, gin, lime juice, and simple syrup.
  4. Fill the shaker with ice, shake vigorously for about 20 seconds.
  5. Pour the contents into a tall cocktail glass and stir in a few spoonfuls of the cooked tapioca balls.
  6. Gently spoon Aperol over the top, then serve immediately with a straw.
