Ingredients
- 2 tablespoons sugar or honey
- 1 teaspoon orange zest
- 2 tablespoons orange juice
- 1/2 teaspoon lemon zest
- 1 cinnamon stick
- 2 whole cloves
- Pinch of nutmeg
- 5 oz full-bodied red wine
- 1/4-inch ginger, peeled and bruised
- 1 whole star anise
- 1/2 vanilla pod
- 10 allspice berries
- 5 black peppercorns
- 1 bay leaf
Instructions
- In a nonreactive, heavy pot, combine sugar, citrus zest, orange juice, and spices.
- Heat the mixture over medium-high heat until the sugar is dissolved and an aromatic syrup forms (about 4 to 5 minutes).
- Lower the heat to low and add the wine.
- Bring to a bare simmer and continue over low heat for about 15 minutes until the wine is flavorful, but do not let it boil.
- Strain and pour into a mug or heat-resistant glass.
- Garnish with an orange slice or cinnamon stick if desired. Serve steaming hot.
