Ingredients

  • 1/6 orange
  • 5 oz dry red wine
  • 1 tbsp firmly packed brown sugar
  • 2 thin rounds of ginger (about 1/2 inch each)
  • 2 whole cloves
  • 2 crushed cardamom pods (include both pods and seeds)
  • 1/2 cinnamon stick
  • 1 oz aquavit (or rum, brandy, or vodka)
  • Optional: a few golden raisins, blanched almonds, and thin orange or clementine slices for garnish

Instructions

  1. Use a vegetable peeler to remove the peel from 1/6 of an orange. Place the peel strips in a medium saucepan.
  2. Cut the orange in half and squeeze the juice into the saucepan with the peel.
  3. Add all the remaining ingredients to the saucepan and heat until the mixture comes to a simmer.
  4. Cover the saucepan and remove it from the heat. Let the mixture steep for two to four hours at room temperature.
  5. Strain the mixture into a clean container. This can be prepared up to a week ahead and refrigerated until ready to use.
  6. When ready to serve, return the mixture to a saucepan. Add aquavit and a handful of golden raisins. Heat but do not boil.
  7. Serve immediately, garnished with raisins, blanched almonds, and orange or clementine slices if desired.
