Ingredients

  • 1 large egg (separated)
  • 2 teaspoons superfine sugar
  • 1 oz heavy cream
  • 1/2 teaspoon pure almond extract
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 oz aged rum
  • Garnish: grated cinnamon
  • Garnish: grated nutmeg

Instructions

  1. Begin by separating the egg into two bowls.
  2. Using a hand mixer, beat the egg yolk until it becomes creamy.
  3. In a separate bowl, beat the egg white with 1 teaspoon of sugar until soft peaks form.
  4. Carefully fold the beaten egg white into the creamy egg yolk using a spoon.
  5. In another bowl, beat the heavy cream with the vanilla and almond extracts and the remaining 1 teaspoon of sugar until stiff peaks form.
  6. Gently stir in the aged rum into the cream mixture.
  7. Slowly fold the cream mixture into the egg mixture.
  8. Serve the eggnog in a punch or martini glass over ice, if desired.
